South Beach Friendly Recipe: Roasted Veggie Whole Grain Pizza

Taking asthma medications has resulted in my gaining about 15 extra pounds over the past couple of years.  I eat well, lots of whole grains, veggies and fruits.  I don't eat sweets or fatty snacks, I eat low fat cheese and meats.  I do drink a cup or two of coffee with sugar every morning and a half of a small glass of OJ and I like to drink wine.  I recently stopped drinking lemonade and went to water.  No matter how much I cut back the weight remains.  Steroids create belly fat, I think it has to do with cortisol production because they are corticosteroids. They're not the same steroids that body builders take...or I'd be buff instead of puffy!  It's also hard to do cardio when you can't breathe...so I'll be doing resistance training again.

The weight gain has made me increasingly frustrated and I decided to suck it up and try the South Beach Diet.  Many of the meals I make are already South Beach friendly because my husband was on South Beach for two years before going to Burn the Fat.  He doesn't like me to discuss his diet...so I'll leave it at that.  Let's just say he's living proof that it works.

For the first two weeks I can't eat any whole grains or drink coffee or wine. I'm not really excited about the next two weeks to be honest, but it's two weeks. I can do it.  After those two weeks I can add in whole grain rice, pasta and bread and enjoy wine again and I'm thinking I'll just give up coffee because I don't like it without sugar and I'm having to bid sugar goodbye and I refuse to eat fake chemical sugar.  I'm blogging this so I'm accountable to someone besides myself and my family.  I'll keep you posted!  I just want to lose 15 pounds, which seems like not very much but when you're small boned like I am, it makes a big difference in the way your body looks.  I like curves, I just don't like cellulite and muffin tops.  Well I like muffin tops, but not the ones at the top of my pants.

This is a Phase 2 recipe that I made on Saturday which I'll be able to enjoy again in two weeks.  We have pizza once a week and this is a way to do that and not be totally indulgent.  Use a whole wheat flat bread of some kind (naan, pita, whole wheat thin pizza crust) and load it up with roasted veggies and a smattering of low fat or fat free cheese. (Make sure you check the ingredients on your breads and crackers, it's important to avoid processed and enriched flours.  You want 100% whole grains.) 

Roasted Veggie Whole Grain Pizza
South Beach Phase 2 Friendly
Margot Potter
Serves 2-3 People


Ingredients
2 Whole wheat or whole grain flat bread (I used a Wegman's naan)
1 Red, green or yellow bell pepper
1/2 medium sweet onion
3 cloves garlic
5-6 campari or other slicing tomatoes
Fresh basil
Lo Fat or Fat Free Shredded Mozzarella
1oz. Lo Fat Goat Cheese (if you can't find lo fat, full fat is okay since it's such a small amount)
1 tbs. Extra Virgin or Light Olive Oil

1. Slice onions and bell pepper into thin strips.  Mince garlic.  Toss veggies and garlic into a mixing bowl, add olive oil and toss.  Place veggies in a thin layer on a baking sheet.  Roast in a 450 degree oven until they begin to brown, turning once.

2. Use about 1 cup of mozzarella and spread on top of the flat breads.

3.  Thinly slice tomatoes and arrange on top of cheese.

4. Liberally sprinkle roasted veggies on top. Dice or cut strips of basil and scatter across top of veggies.

5.  Break goat cheese into small clumps and dot across top of veggies on pizzas.

6.  Place pizzas on a baking tray in a 450 degree oven and cook for approximately 10-12 minutes or until crust begins to brown.

2) tentang isu Apco ni, walaupun ramai tentu tak puas hati rm76juta dibayar (untuk apa bayar tinggi gitu?!) saya tak rasa ini bermakna kerajaan sokong zionis dan pembunuhan palestin. cuma ia bermakna kerajaan bodoh sebab tak periksa rapi sebelum mengambil PR agency ni.
tanyalah orang dalam: ada orang pertengahan yg dipercayai telah rekomen, menurut cerita, lalu diterima. ia itu ia cerita lama kerajaan BN - menggunakan middleman dan bukan kerajaan sengaja upah firma zionist (kalau betullah apco ni zionist).
si abang anwar pula selalu main rapat dgn ketua-ketua kaum yahudi yg bersimpati dgn zionist dan masuk lagi kumpulan dan firma mereka - sehingga BANYAK betul gambar, jadi tak boleh menafikan ia berlaku! - jadi silalah laporkan jika nak berlaku adil.

Best Friends

I'm back from the best trip EVER. When I became friends with Marydon, Blushing Rose through blogging, I didn't think that our friendship could ever be any stronger, but I discovered that a best friend is a SISTER that destiny forgot to give you. I love you SIS. We shared so much laughter, so many funny stories, shed a few tears, and had the best fun of our lives. I cannot begin to thank you enough. I will feel these hugs of happiness until I come home next year.



Harold thank you for tolerating me for the week, you are the sweetest man and your laughter is so contagious.  I will treasure so many moments that we shared. You too, will always have a special place in my heart. Thank you sweet friend for opening your home to me.



I traveled from Phoenix to Baltimore and Marydon drove me into PA., West Virginia, and Virginia. We shopped till we dropped. We visited many historic places, and ate at the finest resturaunts that these states have to offer.



You two are definitely the Host and Hostess with the MOSTESS, and I thank you so much for the BEST time ever. What fun we all had.



I will be posting photos soon ladies. Today I am resting, I have come down with a really bad cold, had a long day flying home yesterday and tomorrow it's back to work.  I can hardly wait to share with you. Hope you have a beautiful Sunday.

Good Evening!

Thrissur Pooram was really grand!I missed the live show on television as I was away attending a cultural event held away from town!the sky was cloudy.since it was Saturday evening the open air ground was full. The young and talented participants were really enthusiastic.they showcased their talents under the able guidance of professionals.From Saraswathi Vandana to the Ipl dance,every item was brilliantly presented.The event also saw the the prize distribution of the best participants.

The Chief Guest arrived fifteen minutes late, as he had to travel a long distance.The moment he arrived with his wife,the mild showers started.There was chaos and commotion but Thank God,the showers stopped within ten minutes. Here I want to write about the Italian dance that enthralled the audience.I must tell you,yaar,I was completely bowled over by this enchanting performance!

There's an Italian saying that if you kiss under the 'Bridge of Sighs'in Venice your love will last forever.I'm not sure about this; still one can give a try!:)but the lovers must visit Venice-the most romantic city in the world-to glide along the Grand Canal in a gondola and you can see many couples kissing blissfully under the Bridge of Sighs sitting on those Venetian row boats hoping their love would last forever.

The traditional dance and music have been part of the community life in Italy.They sing and dance for their own entertainment,as part of their family and community rituals and events.

16th century Italiyan dances are the most complex of the different types of renaissance dance.Italian folk dance has been an integral part of Italian culture for centuries.Dance has been a continuous thread in Italian life from Dante through the Renaissance,the advent of the Tarantella and the modern revivals of folk music and dance.

The carol or carole[carola in Italian],a circle or chain dance which incorporates singing was the dominant Medieval dance form in Europe from atleast the12th through the 14th centuries.This form of dance was found in Italy as well.It is described a group of women leaving the church in Bologna at the festa of San Giovanni;they form acircle with the leader singing the first stanza at the end of which the dancers stop and dropping hands,sing the refrain.the circle is then reforms and the leader goes on to the next stanza.

In all the dances the upper body is kept erect,the arms are quiet and there is alittle movement above the waist.The steps were done with a rising and falling motion like the motion of a boat in waves.

The girls wore glittering gowns in white and red.The props were small cute green umbrellas,garlands and gypsi,the musical instrument which is round.the movemnets and the various formation were so graceful and beautiful!I was in some dreamland,specially after the mild showers and these dancers took me to the farthest land of Italy.

It was an unforgettable experience and real feast for eyes!With beautiful memories,

I came back home to a good night's sound and dreamy sleep!the rain drops still play the magic!:)
